This kit will yield 2 pints.
You will need a strainer, cheesecloth or nutmilk bag, 1-2 cups local honey, jar(s) for storage. Comes with labels, dosing information and instructions (includes instant pot variation)
STOVETOP PREPARATION
What You'll Need
• Large pot
• Metal spoon
• Large metal or glass bowl
• Fine mesh strainer or a colander (pasta strainer) lined with cheesecloth
• Cooking thermometer (optional)
• Funnel
• 5 cups water
• Clean lidded glass container or glass jars
• 1¼ cup honey or appropriate amount of an alternative sweetener
Discard the tiny desiccant package from your kit, then pour kit contents and water in a large pot.
Bring liquid to a brief boil over medium-high heat.
Reduce heat and let mixture simmer for 30-45 minutes, or until liquid has reduced by half.
Carefully pour liquid through the strainer/cloth into a bowl, then press on the mixture with the back of a metal spoon to extract more. Discard or compost strainer contents.
Add sweetener to taste, stirring until completely blended. (If using raw honey, let syrup cool below 100°F first. Measure with a cooking thermometer or wait until syrup feels warm, but not hot. If using another sweetener, follow package directions for substitution guidelines.)
Funnel syrup into container, apply lid, and refrigerate immediately. If freezing syrup, allow 1" headspace for expansion and do not apply lid until completely frozen.
